100  Shocked
the leccy fan stats I have seen kick in at 85ish, the 3.1 water stat opens at 82.

The reason the system is pressurised is so that the water temp goes over 100, engines work better at around 110 - 120 degrees iirc.

The X Eng  thermostatic switch insert is designed to switch one fan on at 88 degrees C and off at 83 and the other on at 92 and off at 87 which is about right for most vehicles and perfect for the 3.1TD.
