Call me a newb, but I've never done any 4x4'ing before now, but wouldnt the car fill up with water inside lol? or does that depend on door seals etc?

Good door seals (and solid doors, unlike my slightly flapping drivers door bottom) help, but the main thing that keeps it out is your forward movement as the water flows along away from the seals. If you stop they do tend to fill up. I used to regularly swim my old Suzuki SJ through a shallow lake in my local quarry and never really got wet inside.

Where did the owner of the white one get his snorkel and light bar from and any closer pics of it, I fancy a snorkel on mine and want to roof mount some lights.

When off roading in water the knack is to get a bow wave in front of the car, which creates a depression behind the car thus not filling the engine bay or car up. Too fast and you will flood a petrol engine and poss the interior of your car, or (with no snorkel) get water in the engine, with dire consequences.

Remember that oil and riverlife do not mix and the Rivers authorities get VERY upset if this is done in the wrong place!
